聚乙烯醇与聚丙烯酸对中温α-淀粉酶的影响 预览

摘要 研究了聚乙烯醇( PVA)和聚丙烯酸( PAA)对α-淀粉酶活性的影响,并采用荧光光谱法和圆二色谱法分析了PVA和PAA对α-淀粉酶内源性荧光和二级结构的影响。结果表明,PVA和PAA均能使α-淀粉酶的活性降低,并能改变α-淀粉酶的内源性荧光和二级结构,且PVA和PAA的浓度越高,α-淀粉酶活性降低越大,酶的内源性荧光和二级结构的变化也越大。 In this paper, the effect of PVA and PAA on the activity of α-amylase was investigated, and the endogenous fluorescence and the secondary structure of α-amylase were also analyzed by using fluorescence spectroscopy and circular dichroism.The results showed that both PVA and PAA could change the endogenous fluorescence and secondary structure ofα-amylase, which resulted in the reduction in the activity ofα-amylase.The more the amount of PVA and PAA added, the more obvious changes were.
